Spicy Ban Mi Turkey Sandwich

A great way to use up leftover turkey is to put it on a ban mi sandwich. Cooking one of the popular Vietnamese dishes is not difficult at all.

Ingredients
- Boiled or baked turkey 200 g
- Lime zest 1 piece
- Hot chili sauce 4 tbsp spoons
- Mayonnaise 4 tbsp spoons
- Ginger to taste
- Garlic 1 clove
- Lime ¼ pieces
- Cabbage ¼ head of cabbage
- Cucumber 1 piece
- Carrots 1 piece
- Lime ½ pieces
- Soy sauce 1½ tbsp spoons
- Baguette 1 piece
- Hepatic pate 4 tbsp spoons
- Coriander greens to taste
- Chili flakes to taste
Cooking method

Disassemble the turkey into fibers and heat in a pan. The sauteed pieces are then tossed in the lime zest and hot sauce. Wait another 1-2 minutes for the sauce to slightly caramelize.

Mix mayonnaise with grated ginger, chopped garlic in a mortar and freshly squeezed lime juice.

Finely chop the cabbage for the salad. Grate the cucumber and carrots. Season the vegetable mixture with freshly squeezed lime juice and soy sauce.

Cut the baguette in half vertically, and divide each of the halves additionally horizontally.
It is better not to cut through until the very end so that it is more convenient to eat the sandwich.

Grease the bottom half of the baguette with pate, top with the turkey and salad. Drizzle over with hot mayonnaise sauce and top with coriander greens and chili flakes.

The finished sandwich can be cut into smaller pieces and packed in a lunch box, or you can start eating immediately.
