Whole chicken baked with ginger, garlic and lime

The poultry is rubbed with an oil mixture of ginger, garlic and spices and cooked with onions, peppers and limes. Therefore, the chicken has a delicious flavor.

Ingredients
- Butter 2 tbsp spoons
- Garlic 5 cloves
- Ginger 1 large piece
- Salt to taste
- Ground black pepper to taste
- Whole chicken 1.8-2 kg
- Onion 1 piece
- Hot pepper 2 pieces
- Lime 1 piece
- Water 1 glass
- Chicken broth ½ cup
- Fish sauce 1 tbsp the spoon
Cooking method
Combine softened butter, chopped garlic, 1 tablespoon grated ginger, salt and pepper in a bowl.
Spread half of the mixture under the skin of the chicken, and rub the rest of the mixture inside and out. Season with salt and pepper again, if desired.
Place the chicken in an ovenproof dish. Scatter chopped onions and hot peppers, 12 thin slices of ginger and a quarter of lime nearby.
Add ¹⁄₂ glass of water and place the pan in the oven at 220 degrees.
Cook for about 30 minutes, then use tongs to turn the chicken breast-side down and cook for another 20 minutes, until the skin is lightly browned.
Then turn the chicken over again, add the remaining water and continue baking for 20 minutes.
Remove the chicken from the oven and tilt it over a clean saucepan to let all the fat drain inward.
Then put the saucepan on high heat, pour the broth into it and bring to a boil. Add fish sauce and stir. Strain the resulting sauce if necessary.
Serve the chicken and stock sauce in separate dishes. It is better to dip pieces of meat in sauce.
