Baked pork with ginger-soy sauce and raisins

First, the pork is fried in a pan and then baked in the oven. Therefore, it turns out to be very gentle. The unusual sauce gives the meat a spicy flavor.
Prepare a skillet that can be used for both oven and stove-top frying. Heat oil in it.
Arrange the pork and season with salt and pepper. Cook over high heat for about 3 minutes on each side, until the meat is golden brown.
Then move the skillet to an oven preheated to 180-200 degrees and cook the pork for 18-20 minutes. Turn the piece twice while cooking.
If you have a kitchen thermometer, then the signal that the tenderloin is ready will be a reading of 60 degrees in the thickest part of the piece.
Transfer the pork to a wooden board and let it rest for 10 minutes.
In the same skillet where the tenderloin was cooked, combine the apple juice, broth, soy sauce, raisins and ginger and bring to a boil.
Simmer the sauce for about 4 minutes, until half of the liquid is evaporated.
Dissolve the starch in water and add to the sauce. Continue cooking for about 1 minute, until it is thick enough.
Slice the pork, place in bowls and top with hot sauce.
