How to prepare mushrooms
Sort out the mushrooms, immediately discard the wormy and spoiled ones. Shake hats and legs off the ground, needles and other forest debris. Rinse the mushrooms under running water.
Do not cut into pieces - it is better to chop mushrooms after boiling. You can sort the mushrooms by size. So, for pickling and pickling, it is better to take small whole specimens, and large ones are usually used in salads, filling for baking, or simply season them with sour cream and serve with a side dish.

Medium and large ones will cook in 20-25 minutes, and small ones will take 15 minutes.
If, after boiling, you plan to process the mushrooms further, the time will be reduced. Medium and large should be cooked:
- for frying, stewing and baking - 10 minutes;
- for freezing - 10 minutes;
- for hot salting - 5-10 minutes;
- for pickling - from 15 minutes, depending on the recipe.
Keep small mushrooms on fire for a few minutes less.
For soup these mushrooms are usually not boiled beforehand.

How to cook mushrooms
Put the mushrooms in a saucepan and cover with water at room temperature. Bring to a boil and simmer over low heat. Stir occasionally and remove any foam that appears on the surface. Add salt at the very end of cooking. Put no more than a teaspoon per liter of water.
Throw the finished mushrooms in a colander so that the excess liquid is glass.
