How to choose champignons
Fresh champignons should be clean, dry and free of slimy deposits. In color, they are milky white or with a light beige tint, while always matte. The hats are elastic, without a lot of dents, dark spots and other damage, there are no voids in the legs.
If you choose champignons packaged in packages, also carefully look so that there is no mold and moisture inside.
If the mushrooms are frozen, the amount of ice should be kept to a minimum. It is better to refuse the purchase of crushed champignons, which rather resemble a mixture of mushroom and ice crumbs.

How to prepare champignons
Rinse fresh mushrooms under running water and place on paper towels. Use a soft sponge to remove stubborn dirt. If the caps of small young champignons are without damage and dark spots, you can do without cleaning - just cut off the darkened ends of the legs with a knife.
To peel the mushrooms, gently pry the skin with a knife or fingers and pull towards the center of the cap. If there are small, uncleaned areas or dark spots, carefully remove them. Cut off the "skirts" and update the cut on the leg. Rinse the mushrooms and pat dry on paper towels.
If you are using frozen mushrooms, first let them thaw in the refrigerator. You don't need to do this unless you are cooking in a pressure cooker.
To emphasize the flavor and make it more interesting, add salt and spices to the mushrooms. A few grams of citric acid will help preserve the color of the mushrooms.

How and how much to cook champignons on the stove
Pour water into a saucepan - 1.5 liters of liquid per 1 kg of mushrooms. Add 1–2 teaspoons of salt, citric acid, a few peas and other spices of your choice. Bring the water to a boil and add the mushrooms.
Cook fresh whole and large mushrooms over low heat for 10-15 minutes after boiling, cut into pieces - 5-7 minutes. Thawed mushrooms will cook in an average of 7-10 minutes. Throw the finished mushrooms in a colander to glass the water.
How and how much to cook champignons in a slow cooker
Place the mushrooms in the bowl of the machine. You don't need to add water, but salt and your favorite spices will do the trick. To make it even tastier, you can sprinkle the mushrooms with seasonings and leave for 15 minutes before cooking.
Then close the multicooker with a lid and cook whole fresh and defrosted mushrooms in the "Stew" mode for about 20 minutes.
Small pieces of mushrooms are cooked for about 5 minutes less.
How and how much to cook champignons in a double boiler
It is better to cook whole mushrooms this way: they will not lose moisture and will turn out to be very juicy.
Salt the mushrooms, add spices and leave for 15 minutes. Place the mushrooms in a single layer with their legs up. Cook fresh mushrooms for 5-10 minutes and thawed mushrooms for 7-10 minutes.

Place the mushrooms in a microwave-safe container. Season with salt and spices. Cover and cook for 2-3 minutes at maximum power, stir once during this time.
Cook large, whole mushrooms for about 1 minute longer. The pieces will take one and a half to two minutes.

Place whole or chopped mushrooms in a bowl. Season with salt and spices. Pour boiling water over and cook for no more than 4-5 minutes. To cook champignons in this way, you do not need to defrost them.
