How to prepare birch trees
Go through the mushrooms. If there are any spoiled or wormy ones, throw them away. Clean the birch trees from leaves and other debris - it is convenient to do this with a brush or cloth.
Remove the tips from the legs and scrape off the skin with a knife. Rinse the mushrooms under running water and cut into pieces.
Frozen boletus must first be thawed. This will take several hours.

How much to cook boletus
After boiling water, fresh mushrooms need to be cooked:
- for soup - 40 minutes (although usually they add fried);
- before marinating - 20-25 minutes;
- before frying - 15–20 minutes (sometimes raw boletus is fried right away, especially if they are young and small);
- before freezing - 20-25 minutes (fried mushrooms are often frozen).
Frozen will take 20-30 minutes after boiling. You do not need to boil them before frying.
The finished mushrooms should sink to the bottom of the pan, and the broth should become transparent.

How to cook boletus
Put the mushrooms in a saucepan, cover with cold water and salt. For 1 liter of liquid, 1 tablespoon of salt is needed. Bring to a boil.
At this stage, many people prefer to change the water to clean water and bring it to a boil again. If you cook mushrooms this way, add salt to the second water. After that, cook the birch trees over medium or moderate heat for the required time. In the process, remove the emerging foam.
