Unlike wheat and rice, containing a small amount of lysine, the amino acid composition of quinoa proteins balanced and very close to the composition of milk proteins, the number of amino acids up to 20 types. Besides unique proteins, quinoa also contains carbohydrates, fats (high lecithin acid), fiber, minerals and vitamins of group B. Quinoa is also rich in phosphorus (three times more than the figure of the highest quality, and is not inferior to many kinds of fish), iron (twice that of wheat), calcium, zinc.
