RECIPES: 4 Winter salad with cabbage

Therefore, we have decided to recall the good old recipes for winter, which used more of our mothers and grandmothers, and at the same time add to your piggy bank of simple, tasty and healthy recipes for a couple of new products.
What we have in the winter cheap and cheerful? Of course, it's different kinds of cabbage, carrots, onions, apples, celery, parsley and parsnip. That from this you can cook? It turns out that a lot of things. However, for more sophisticated options you need to add some more expensive ingredients, such as peanut oil or walnut oil. Second, by the way, it is quite cheap, so I think that in some recipes it can completely replace the peanut.
Recipe № 1. Salad with cabbage and peanuts
Ingredients:
- 1/2 small red cabbage;
- 1/2 small cabbage;
- 1 lettuce beam or fresh spinach;
- 1/4 cup fresh lemon juice or lime juice;
- 1 tablespoon Dijon mustard;
- 1/2 teaspoon ground cumin;
- 1/4 cup peanut oil or walnut oil;
- 1/2 cup roasted unsalted peanuts;
- salt and pepper to taste.
Preparation. Cabbage, finely chop, mix, season with salt and carefully note your hands, so she let the juice, and then drain it. Return the cabbage in a salad bowl, add to chopped salad or spinach and pepper.
In a separate bowl, combine cumin, lemon juice and mustard. Then pour a thin stream into peanut butter sauce, stirring the mixture constantly.
Add the dressing to the salad, mix everything well and add to the bowl of peanuts. If your taste salad was not very salty, you can add a little salt and pepper.
Recipe № 2. Salad with cabbage and raisins
Ingredients:
- 1 small red cabbage;
- 1 small cabbage;
- 2 carrots;
- 1 green apple;
- 1 fennel beam;
- 300 ml yogruta tasteless;
- 2 tablespoons olive oil;
- 2 tablespoons apple cider vinegar;
- 70 g large raisins seedless;
- 70 g sunflower seeds;
- salt and pepper to taste.
Preparation. Shred the cabbage, salt and mash well and let soak 15 minutes. While resting cabbage, carrots rubbed on a coarse grater, apple peel peeled and cut into thin strips, crush fennel, cut the raisins at least two parts.
Merge cabbage juice, add to the cabbage carrots, apple, sunflower seeds and raisins and everything well mixed.
Dill add to the yogurt and mixed well. Then there was added olive oil and apple cider vinegar. Good mix all ingredients until smooth sauce.
Lay out a salad in a bowl, add salt and pepper to taste, if it is still necessary, add a dressing of yoghurt and again everything mixed.
Recipe № 3. Winter salad with cabbage and apples
Ingredients:
- 1/4 cup olive oil;
- 2 teaspoons Dijon mustard;
- 1 tablespoon honey;
- 1 lime;
- 1 small red cabbage;
- 1 coarsely chopped daikon (or a few pieces of white radish);
- 2 green apples;
- 1/2 cup chopped cilantro or parsley;
- salt and pepper to taste.
Preparation. In a small bowl, mix together the ingredients for the filling: lime juice, olive oil, mustard and honey.
Cut into small pieces of apples and radishes and mix it with the cabbage, cut into strips. Add salt and pepper salad, add to refuel and stirred by hand. Send a bowl of salad to rest in the fridge for at least an hour.
Before serving, add chopped fresh cilantro or parsley!
Recipe № 4. Salad with cabbage and beets
Ingredients:
- 1/2 small cabbage;
- 2-3 medium sized beets;
- 3-4 green onions a feather;
- a small bunch of dill;
- 200 ml of sour cream;
- 1 tablespoon mustard;
- 50 ml of olive oil;
- salt and pepper to taste.
Preparation. Put to cook or bake beets. While she was being prepared, the cabbage cut into strips, add salt to it and mnote good hands. Leave for half an hour, so she let the juice.
While the cabbage is resting, mix the ingredients for the sauce (mustard, sour cream, and olive oil) and chopped dill and chives.
Cleans boiled beets and cut it into strips. With merge cabbage juice and mix with beets, green onions and dill. Add to salad dressing, mixed well and filing on the table.
