Another recipe for the cake in a cup, which is under the power of any one who knows how to use a microwave, and knows what the meal. It can be prepared in haste to surprise someone, and can be prepared in the office, if you are there, of course, all the necessary ingredients (which is very unlikely, but sometimes it happens). Recipe tested: the preparation process is simple and at the output you get really quite delicious cupcake;)
We have already published one recipe for chocolate cake in a coffee cup, Which can be cooked in the microwave. This time it will be a coffee cake, and I decided to test the recipe. The result was tasty, but I made some adjustments on my own.
So, first I broke a recipe for one serving of two small glass cups with thick walls. Chose the glass, so you can take a picture and show how the cake looks like inside, besides it's more convenient to watch, whether it progotovilsya whole, or just grab the upper hand. I advise you still do in a normal cup - so convenient!
Ingredients for 1 serving1/4 cup of flour, a pinch of baking soda or baking powder, 2 teaspoons of sour cream, a small piece of butter, 1/2 eggs, 2 tablespoons tablespoons of brewed coffee, 3 tablespoons sugar, or add it to your liking, cinnamon, nuts and brown sugar (optional).
Preparation. Put a piece of butter in the dish and send it in the microwave for 10 seconds just to softened butter. If oil and so soft, you can skip this step.
Add to butter sugar and stir with a fork.
Then add the cream and stir again.
Whisking egg divide in half and add the brewed coffee, and then add all the oil mixture into the cup.
Mixing flour with baking powder, add spices and nuts (optional), and sending the cup again.
Good stir fork and put in the microwave at medium power (550-600 W) for 5 minutes. After this check, whether to cook, and if the cake is still damp, again send in the microwave, adding just 10 seconds. In order to determine the readiness of cake, pierce it with a toothpick or wooden skewer - if it is wet, then the dough is still raw inside.
Now on my own: I do not quite calculated and my muffins turned out crisp, as, firstly, the portion was is divided into two parts and small cups, secondly, in the source preparation time was 10 minutes, but this is clearly lot. So what happened with me, the consistency was closer to crunchy oatmeal cookies. But still delicious!
Since I love coffee, I took the risk and added to a mixture of 2 tablespoons if you are not very large fan of this drink, it is quite possible to exclude from the recipe and add the whole egg, and not to share it half. And sour cream, I would add a little more - because it would have made the cake softer and moist. I also added a little to the almond flakes. In general, the filling can be anything: raisins, dried cranberries, various nuts, chocolate chips and coconut. And you can just add nothing and just leave the coffee muffin.
Oh, and also very important note - the mixture should fill about 1/3 cup, can be a little more. Otherwise, when the cake starts to rise, it may well run out of your cup and then have to wash even a microwave.
