Recipe: Chicken roll with dried apricots and pesto

I want to share with you a recipe for a snack, which has repeatedly saved me in situations where you need to quickly cook something delicious, or when you just want to diversify their menu and do not spend the evening at plate.
Generally I do not like a dish in which the meat is combined with sweet ingredients, but the chicken with dried apricots and pesto - an exception.
Ingredients
- skinless chicken breasts - 1 pc .;
- apricots - 75 g;
- parsley - 1 bunch;
- Basil - 1 bunch;
- Parmesan - 30 g;
- Garlic - 2 cloves;
- olive oil - 100 ml;
- salt;
- pepper.
preparation
Chicken breast cut into thin layers and carefully repulse (must turn a very thin slices). Meat salt and pepper.
Preparing pesto. sauce variations there are so many, I prefer to add fresh parsley in it.
Parsley, basil, parmesan and garlic are ground and mixed with olive oil. Small pieces of chicken are added together to obtain a wide layer, and put on it the sauce.
After that, spread the chopped apricots.
We turn off the meat with dried apricots and sauce in a roll.
Each roll wrap in foil and put in the oven at 15–20 minutes at 180 degrees.
Finished rolls cut into small pieces and to the table We serve hot or cold.
A great option for a quick and original snacks, for example, when unexpected guests descended. Roll can be put on slices of baguette - will turn out delicious sandwiches.
