2. Jam of zucchini with oranges and ginger
Ingredients
- 2 oranges;
- ½ small ginger root;
- 1 kg zucchini;
- 1 kg of sugar;
- 50-70 ml of water;
- a pinch of cinnamon - optional.

Grate the zest of oranges and ginger on a fine grater. Zucchini and orange flesh cut into small cubes.
Put the courgettes, oranges, their zest and ginger in a saucepan. Pour the sugar and stir. Cook over medium heat, stirring occasionally, 10-15 minutes. Courgettes should be soft.

3. Jam of zucchini with dried apricots and lemon
Ingredients
- 150 g of dried apricots;
- 1 kg zucchini;
- 1 kg of sugar;
- ½ lemon.
preparation

4. Jam of zucchini with apples and raisins
Ingredients
- 1200 g of zucchini;
- 700 g of powdered sugar;
- 2 sour-sweet apple;
- 200 g raisins;
- a pinch of vanilla.
preparation
Cut the zucchini into small cubes and place in pan. Cover them with icing sugar and place on a moderate fire. Stirring, bring to the boil and cook for 20 minutes.

5. Jam of zucchini with bananas
Ingredients
- 3 kg zucchini;
- 5–6 bananas;
- 1½ kg of sugar.
preparation
Slice the zucchini and bananas identical cubes and place in pan. Pour the sugar, stir and leave for an hour. During this time the squash will give juice.
