3 delicious and simple dishes of noodles

Noodles in combination with condiments and sauces turns from the regular meals in exotic. All the ingredients are easy to find in large supermarkets and cooking time is less than 15 minutes.
1. Noodles dan-dan
Ingredients
- 3 garlic cloves;
- 100 g of roasted peanuts;
- 5 tablespoons of peanut oil;
- 2 tablespoons white wine vinegar;
- 100 g of fresh spinach;
- 400 g of wheat noodles;
- 3 tablespoons soy sauce;
- 1 teaspoon of sugar;
- ½ teaspoon Sichuan peppercorns;
- 4 green onions a feather.
preparation
Crush the garlic, chop the onion. Crush pepper in a mortar as finely as possible. In spinach, remove stems. If the leaves are large, chop them.
Peanuts, garlic, onion white part, pepper, sugar, soy sauce, vinegar and oil is put in a blender or processor. Mix them until a homogeneous mixture state. If the sauce will be too thick, add a tablespoon of hot water.
Boil noodles in salted water, fold in a colander and place on plates. Add the spinach leaves or watercress and stir. Pour prepared sauce noodles, sprinkle with green onions, peanuts and pepper.
2. Cold noodles with peanuts and sesame seeds
Ingredients
- 340 g of egg noodles;
- a small piece of ginger, peeled from the skin;
- 1 clove of garlic;
- 2 carrots;
- salt;
- ¾ cup strong brewed green tea;
- ⅓ cup peanut butter;
- ¼ cup soy sauce;
- ¼ cup rice vinegar;
- 3 tablespoons light brown sugar;
- ¼ cup peanut butter;
- 2 tablespoons toasted sesame seeds;
- 1 teaspoon hot sauce chili;
- 1 teaspoon dark sesame oil.
preparation
Boil noodles in salted water and fold in a colander.
Prepare the sauce: In a blender, mix green tea, peanut butter, Soy sauce, vinegar, sugar and peanut butter. Add sesame seeds, chili sauce, sesame oil, ginger, garlic and a pinch of salt. Mix everything in a blender until smooth.
In a large bowl, mix the noodles with peanut sauce and grated carrot on a fine grater. Cool. Sprinkle with peanuts and sesame seeds.
3. Rice noodles with tofu and vegetables
Ingredients
- 100 g of rice noodles;
- 2 garlic cloves;
- 1 chili pepper;
- 2 tablespoons of vegetable oil;
- 1 zucchini;
- 100 g of tofu;
- 1 carrot;
- ginger root - to taste;
- soy sauce - to taste.
preparation
Boil noodles in salted water and fold in a colander.
In wok (or shallow pan) and heat the oil fry chili, chopped garlic and grated root ginger.
Slice the zucchini and carrots into thin strips. Add the carrots in the wok, stir the mixture and cook over medium heat for about five minutes. Then add the zucchini and cook for about three minutes.
Put in a wok noodles and tofu, cut into cubes, pour soy sauce and mix. Cook for another three minutes.
