Czech startup 369Sonic introduced an ultrasonic kitchen knife under the same name. The creators note that although ultrasonic knives are actively used for cutting in factories and laboratories, they are going to be the first to bring this technology to the ordinary kitchen.
The knife received a 12-volt rechargeable lithium battery, a printed circuit board and a titanium ultrasonic transducer. The latter is connected to a sharpened stainless steel blade 125 mm long. Once switched on, an electrical signal is generated, which is converted into mechanical movement of the same frequency.
As a result, the blade vibrates at a frequency of 40,000 to 50,000 times per second. These tiny, quick movements keep food from sticking to the blade while slicing, making the 369Sonic easier to wield than a traditional kitchen knife. It is also claimed that the knife does not damage soft, fragile and crumbling food, since there is no great pressure on it during the cutting process.
The creators note that when creating the knife, they were inspired by Japanese blades - like katanas and tanto daggers. The blade of the knife itself is removable: it can be pulled out for general cleaning. Also photo from site 369Sonic has hinted at other types of replacement blades that may be coming, but there are no details about them yet.
The knife operates quite quietly (its volume is compared to a whisper), but for the safety of the user it emits a sound signal while slicing. After use and cleaning, simply close the knife with a protective cover and place it on a stand that functions as a wireless charger. A full charge should last approximately 50 minutes of continuous cutting.
Kitchen knife 369Sonic can be pre-ordered on Kickstarter for 348 dollars (≈32,500 rubles). Deliveries are expected to begin in March next year.
