How to freeze peppers for the winter

Spicy vegetables are prepared only fresh, and sweet ones can still be blanched.
Both sweet and hot frozen peppers can be stored for up to eight months.
How to prepare peppers for freezing
To prepare for the winter, choose strong fruits. However, peppers with minor damage and small soft areas will also work. Such “imperfections” will need to be cut out at subsequent stages.
Rinse each vegetable thoroughly under cold running water to remove dirt and dust.
Place the washed peppers on a towel and let them dry. To speed up the process, you can grate each vegetable separately.
How to freeze whole peppers for the winter
This method can be used to prepare hot and bell peppers. The latter will be especially useful if you want to cook stuffed vegetables.
What you will need
- Peppers;
- knife - optional;
- spoon - optional;
- plastic bags (regular or with a zip fastener);
- Vacuumator - optional.
How to do
1. Use a knife to cut out the stem of the pepper. If you are preparing spicy vegetables, you can go straight to the third step or proceed sequentially.
2. Take out the stalk. Use a spoon to remove seeds and membranes from the vegetable.
3. Do the same with each pepper. By the way, at this stage the bell peppers can be stuffed with any filling you wish - this way you will get a semi-finished product.
Pack vegetables into bags.
4. Gently press down on the package, releasing excess air, and then tie it or close it with a clasp. You can also pack vegetables using a vacuum sealer.
5. Place the peppers in the freezer for storage.
How to freeze pepper pieces for the winter
Chopped vegetables can be pre-defrosted or used immediately for preparing hot dishes. Both hot and sweet peppers are also suitable for this method.
What you will need
- Peppers;
- knife;
- cutting board;
- tray or tray from the freezer;
- parchment;
- plastic bags (regular or with a zip fastener);
- Vacuumator - optional.
How to do
1. Using a sharp knife, remove stems, seeds and membranes from the peppers.
2. Cut the vegetables into pieces. These can be cubes, quarters, strips or any other shape you desire.
3. Line a tray or freezer tray with parchment. Spread the pepper slices on top in a single layer. Freeze the vegetables for 1-2 hours.
4. When the peppers are completely firm, remove them from the freezer. Place the pieces into bags.
5. Press the bag to release excess air, tie it or close it with a zipper. Or use a vacuum sealer.
6. Store the packages of peppers in the freezer.
How to freeze blanched peppers for the winter
This method is only suitable for bell peppers. Pre-treatment will make the vegetables more flexible, and they will take up less storage space.
What you will need
- Peppers;
- knife;
- cutting board;
- two pans;
- water;
- ice;
- skimmer;
- colander;
- tray or tray from the freezer;
- plastic bags (regular or with a zip fastener);
- Vacuumator - optional.
How to do
1. Remove the stem, membranes and seeds from each pepper. Cut the vegetables into pieces of the desired shape and size.
2. Fill the pan with water and put it on the fire. When the liquid boils, dip the chopped vegetables into it for 1-2 minutes.
3. Using a slotted spoon, remove the pepper pieces and place them in a saucepan with cold water and ice for 1 minute.
4. Place the pepper in a colander, let the excess liquid drain and wait until it cools.
5. Distribute the pieces on the tray in one layer. Place the pepper in the freezer for 1-2 hours.
6. Once the peppers are properly frozen, place them in bags. Press down on the package to release air, tie a knot, close the clasp, or use a vacuum sealer.
7. Place the blanched peppers in the freezer for storage.
