How to freeze red, black and white currants for the winter

We tell you how to keep the berries whole and grated.
All actions will be the same for black, and for red, and for white currants. Frozen berries can be stored up to four months.
How to prepare currants for freezing
Select ripe berries no damage or rot. Rinse currants thoroughly under cold water to remove dust and debris. Drain in a colander and let the water drain completely.
Carefully remove the berries from the branches, being careful not to crush them. Black currants are easy to separate with your hands, and with small red and white it is convenient to use a regular fork. Just comb the twigs with it, and the berries will fall into the bowl without any extra effort.
Lay the washed and peeled berries on a cloth or paper towel, blot lightly and leave for 1-2 hours to dry properly. This is especially important if you are freezing whole currants. Due to drops of moisture, the berries will freeze in one lump.
How to freeze whole currants
These berries have a dense skin, so they will tolerate freezing as a whole well. The blanks can then be used for baking and desserts.
What you need
- Currant;
- tray or board;
- plastic containers or bags for freezing;
- marker.
How to do
Spread clean and dry currants in a single layer on a flat surface, such as a tray or cutting board.
Put the berries in the freezer for 2-3 hours. When currant completely frozen, transfer it to freezer bags or plastic containers.
Tie the bags tightly and close the containers with lids, sign the packages with a marker for convenience. Put the berries back in the freezer for storage.
How to freeze currants with sugar
Pureed berries are conveniently packaged in a small container to quickly defrost and add to desserts, cereals, cottage cheese and drinks.
What you need
- 1 kg currant;
- deep bowl;
- 300–500 g of sugar;
- submersible blender;
- plastic containers with lids.
How to do
Put the berries in a deep bowl and sprinkle with sugar. Reduce or increase the amount of sand to your liking. For black and white currants Sahara less will be required, and for sour red - more.
Grind the berries with a blender. Mix well to dissolve the crystals.
Pour currants into containers. During freezing, the mass will expand, so leave some free space on top. Close the containers with lids, sign and put in the freezer.
