How to freeze raspberries for the winter

Three simple ways will help keep the berries until the next season.
Raspberries are rich in vitamins and antioxidants. After freezing in remains almost as many of these nutrients as in fresh, so this is a great way to prepare berries for the winter. In order for raspberries to retain their taste and aroma, use our simple recommendations.
How to prepare raspberries for freezing
Raspberries are very tender and spoil quickly, so you need to freeze the berry as soon as possible after removing it from the bushes. To start, iterate over it. Remove twigs and leaves. Berries that have darkened or moldy, throw away. Set aside the prettiest and largest ones to freeze whole. Leave small and rumpled to grind with sugar or turn into a puree.
In order not to damage the berries, it is better not to wash them. But you can skip this step if you are raised raspberries or bought it from a trusted seller. In other cases, it is better to soak the berries. To do this, pour cold water into a large container and pour raspberries into it, it should be completely covered with liquid; mix the contents with your hands.
Leave for 10-15 minutes and remove any floating debris. Using a slotted spoon or colander, carefully remove the raspberries from the water and let them drain. Then spread the berries in one layer on a paper or fabric towel stable part down, leave for 2-3 hours to dry completely.
How to freeze whole raspberries
Whole berries can be used for garnish cakes and other desserts.
What you need
- Cutting board or tray;
- baking paper or foil;
- raspberries;
- containers with a lid or bags with a zip fastener;
- marker.
How to do
Line a board, tray or freezer tray with baking paper or foil. Put clean and completely dry raspberries in one layer with the stable part down, make sure that the berries do not touch.
Put the raspberries in the freezer for 3-4 hours. Depending on the number of berries and the temperature, you may need more or less time. Periodically check the workpieces, they must be completely hardened.
Transfer frozen berries to containers or bags. Do not stuff the container too tightly, otherwise the raspberries will break.
To make it easy to find the berries later, sign the containers with a marker and indicate the date of harvest.
How to freeze raspberries grated with sugar
The berry in this form is suitable for making smoothies, puddings, hot drinks and toppings for pies.
What you need
- 1 kg of raspberries;
- 300 g of sugar;
- immersion blender or potato pusher;
- containers with lids or plastic bottles;
- marker.
How to do
Place clean raspberries in a bowl. Add sugar, the amount can be adjusted to taste. Mix well, lightly crushing the berries with a spoon. Leave for 15-20 minutes for the juice to stand out.
Grind the berries with a blender. Or roughly mash the raspberries with a potato masher if you want to keep larger pieces.
Pour the mass into containers or small plastic bottles, but do not fill them to the top. Label the containers and put them in the freezer.
How to freeze raspberry puree
Smooth berry puree is useful for making soufflés, jelly, coulis, sauces, lemonade and cocktails.
What you need
- 500 g raspberries;
- 50 g of sugar;
- submersible blender;
- fine sieve;
- ice cube trays or small containers with lids.
How to do
Pour raspberries with sugar and grind with a blender until smooth.
Rub the berries through a fine sieve and remove the seeds.
Pour the puree into containers or ice molds, send to the freezer for 4-6 hours.
If you are freezing raspberries in ice cube trays, place the cubes in a ziplock bag after freezing.
