In addition to valuable bacteria, it contains a certain amount of vitamins, such as A, B, C and D, and micro and macro elements - iron, calcium, sulfur, magnesium, phosphorus, potassium and sodium.
There is a study that confirmsthat the introduction of a small amount of fermented baked milk and other baked milk products (for example, cheeses) into the diet improves the digestibility of whole milk. This is due to the fact that during preparation, part of the lactose reacts, new compounds are formed, to which there is no longer intolerance. Gradually, the body learns to digest whole milk.

Kefir is also a fermented milk product. His cook from whole milk with the addition of about 20 lactic acid, acetic and yeast bacteria.
As in milk, in kefir contained calcium, iron, phosphorus, magnesium, potassium, sodium, copper, molybdenum, manganese and zinc, vitamins A, B, C, D, E, but not in any significant quantities.

On the other hand, thanks to the substances formed during heating, ryazhenka There is the same caramel taste that no other fermented milk product has. And many do not like the taste of kefir, and they add sugar or jam to it.
Unlike ryazhenka, in the production of kefir going on not only lactic acid, but also acetic and alcoholic fermentation. This means that it contains a certain amount of acids, which in theory can irritate the stomach, as well as a small amount of alcohol.
Digging deeper and comparing healing properties is also difficult. Because kefir is studied more often, because it is drunk in more countries. However, it is known that kefir and fermented baked milk showed the same antioxidant properties, and also approximately equal in the content of useful fatty acids, if they have the same percentage of fat content.
