Traditionally, before the May holidays, we publish interesting recipes marinade for meat, poultry and fish. But this time I decided to add a little exotic - kebabs are a taste of Asia.

This marinade for chicken or pork. Thais prepare these mini kebabs on bamboo sticks. Meat incision into small pieces, stripes length of 3-4 cm, a width of 2-3 cm, put in the marinade at least 1 hour and goes to the refrigerator.
Ingredients: 450 g of pork or chicken, 2 teaspoons ground coriander, 1/2 teaspoon cumin, garlic cloves 2, 4 red bulbs piece fresh ginger (2.5 cm), 1 tablespoon of turmeric, 1 teaspoon salt, 2 tablespoons of vegetable oil, 2 tablespoons white Sahara.
Preparation. Finely chop the garlic, onion and ginger, poison in a blender and add to the same turmeric, coriander and cumin. Milled mixture until homogenous and adding salt, oil and sugar and the whole was stirred again. Add to marinade meat and well-boned. Sending in the refrigerator for 1 hr. Cook skewers on the grill until done.
To bamboo skewers not burned in the grill, their pre-soaked in water for 1 hr. In the original recipe uses fresh turmeric root. But since it is quite difficult to find in our stores, I replaced it with a more conventional powder.

Gai Yang - a chicken on the grill. It is cut into pieces, marinated in a special sauce. The original recipe used Lemongrass, but I will replace it in the lime juice.
Ingredients: 1 small chicken (2.1 kg), 10 peas white pepper, garlic cloves 3, 1/4 teaspoon salt, 1/2 teaspoon turmeric 2 teaspoon coriander, 1 tablespoon fish sauce, 1 tablespoon sugar, the juice of one lime (or 1 stalk Lemongrass).
Preparation. Divide the chicken into two parts along the brisket, wash and dry. Coriander, white pepper, garlic, salt, turmeric, and lime juice grind blender until a paste. Add the fish sauce and sugar and mix well again. Coat the chicken and send in the refrigerator for 4 hours. Cooking chicken on the grill until done.
Taitsy clamped between two halves of a chicken and sticks firmly connect the ends of sticks by a thin wire. If you do not want to mess, cook it on the grill, as well as the usual chicken. Fish sauce is sold in the department of Asian goods (in the same place, and rice vinegar, nori sheets for sushi and other products for the Asian cuisine).

Sweet chili sauce (naam jim gai yang) - this is the translucent sauce sauce with chunks of pepper, which you can see in the department of Asian products. It turned out that to cook it at home is very, very simple. And he just created for the grilled chicken!
Ingredients: 7 large, red peppers, chili, 2 cloves of garlic, 12 tablespoons vinegar 8 tablespoons sugar, 1/2 teaspoon of salt.
Preparation. Clean the pepper-chili from seeds, cut into small pieces and chop the blender along with the peeled garlic cloves to a paste. On medium heat put a small saucepan with the vinegar, sugar and salt. Stir until the until the sugar and salt dissolved, then reduce heat to a minimum, add a paste of chilli pepper and garlic and stir until until the mixture is like a syrup.
