Caramel eclairs with custard: recipe

Thoroughly whisk together the egg yolks, starch, sugar, vanilla extract, salt and 100 ml of milk. Make sure there are no lumps.
Bring the rest of the milk to a boil and, stirring constantly, pour in a thin stream to the egg mass.
Strain through a fine sieve and return to the fire. Cook, stirring constantly, 1-2 minutes until thickened.
Transfer the resulting cream to a bowl, cover with cling film in contact and refrigerate for 3-4 hours.
In a small saucepan combine water, butter, salt and flour. Cook over low heat, stirring constantly, for 3-4 minutes. It should gather in a lump, and a thin film should form at the bottom.
Transfer the dough to a bowl, cool slightly. Add eggs to it one by one, stirring the mass with a wooden spatula.
Transfer the dough to a pastry bag. Squeeze strips 10 cm long onto a baking sheet. Leave some space between them as the dough will rise a lot.
Bake the eclairs for 10 minutes, reduce the temperature to 165 ° C and cook for another 25-35 minutes until golden brown. Transfer the eclairs to a wire rack and cool completely.
When the sand turns golden, add the butter, warm cream, vanilla extract and salt. Mix thoroughly until smooth and remove from heat.
Make small holes at the ends of the eclairs, fill the cakes with cream through them. Drizzle with caramel and sprinkle with salt.
