On the duck breast, make punctures in the skin with the tip of a knife. Put sprigs of thyme and rosemary, onion and lemon inside the bird. Tie your legs with twine.
Remove the duck from the refrigerator 30 minutes before roasting. Rub with black pepper, paprika and garlic.
Put the bird into shape. Send to the oven preheated to 220 ° C for 15 minutes.
It is best to use a form with a grate so that the juice flows under it.
Reduce temperature to 180°C. Roast the bird for another 1 hour and 15 minutes.
Cooking times may vary slightly depending on the size of the duck.
Pass the garlic through a press. Ginger grate on a fine grater, 2 teaspoons is enough. Remove half a teaspoon of zest from an orange with a fine grater.
In a saucepan, mix both types of juice with ginger, garlic, honey, balsamic vinegar, salt and pepper.
Add cinnamon stick, bring to a boil and simmer over medium heat for 2-3 minutes. Remove the cinnamon, you won't need it anymore.
Combine corn starch with cold water to make a paste. Add to the sauce and simmer for a few more minutes until lightly thickened, stirring occasionally.
