Pasta Casserole with Eggplant and Tomatoes in the Oven: Recipe

Cut eggplant into slices. Place in a bowl of salted water, press down with a plate to cover completely. Leave for 1 hour, then rinse and dry.
If the eggplant is not bitter, you can skip this step.
Heat 2 tablespoons of oil in a skillet over medium heat. Arrange eggplant in a single layer and fry until browned on both sides. Transfer to paper towels. Prepare the remaining pieces in the same way.
Dip the tomatoes for half a minute in boiling water, rinse under cold water and peel. Cut the pulp into small pieces. You can also remove the seeds if you like.
This dish requires juicy and ripe tomatoes.
Heat a tablespoon of oil in a skillet over medium heat. Sauté the garlic for 30 seconds to release the flavor. After putting it on a plate, it is no longer needed.
Add tomatoes to the same skillet. Season with salt, pepper, cover and simmer for 10 minutes, stirring occasionally.
Grease a baking dish lightly with oil. Put the eggplants in it, covering the bottom and sides with them.
For this dish, it is better to take a round shape.
