Why freeze leftover wine and how to do it right

Even the most ardent wine drinkers face the so-called bottle problem. This is when you have already drunk a glass of wine, or even two, but you understand that drinking the whole bottle is a bad idea if you don’t want to wake up with a headache. Unfortunately, as soon as we open the bottle, oxygen enters it and the wine starts to oxidize. So, in a few days it will have a completely different taste. But there is good news: freezing wine solves this problem.
What is frozen wine good for?
White and red wine are often found among the ingredients in unusual and very interesting recipes, for example Manhattan chowder or lamb kleftiko. Freezing the leftovers of the drink will always keep these ingredients on hand.
In addition, frozen wine can be added to the blender along with your favorite fruits or berries and in a few minutes you get a delicious slush sangria, for example watermelon with basil.
How to freeze wine
British journalist and food critic Nigel Lawson advises freezing wine in regular ice cube trays and then storing it in a plastic bag in the freezer.
If there is much more wine left and there are not enough molds, small plastic containers, such as those that put ginger and wasabi when sushi is delivered, will do. The main thing is to leave some free space under the lid to allow the wine to expand.
There are a few other things to keep in mind when freezing wine.
First, it is useless to freeze sparkling wines. No amount of freezing can preserve the carbonation that makes wine sparkling.
Secondly, wine contains alcohol, which means it does not turn into the same hard ice cubes as water. Keep in mind that once you take a frozen Cabernet or Merlot out of the fridge, it will start to thaw very quickly.
