Classic cheesecakes with cottage cheese on yeast dough

For the dough, mix the flour and yeast in a bowl with warm, but not hot, water. Cover with cling film or towel.
If using dry yeast, take 8 g and dissolve a couple of teaspoons of sugar in water.
Leave the bowl warm for 1.5-3 hours. From time to time check how the dough rises. It should increase in volume by about three times, become porous. If it doesn't, then it shouldn't be used.
Do not keep the dough in a draft. If the apartment is cold, you can slightly heat and turn off the oven so that the temperature is within 30 ° C.
Mix the dough with melted butter, protein, salt, regular and vanilla sugar.
The easiest way is to melt the butter in a water bath.
Gradually add flour and knead the dough. This will take at least 15 minutes.
To facilitate the process, you can use a mixer or bread machine.
Cover the finished dough with cling film or a towel. Leave warm for one and a half to two hours. During this time, it should increase several times.
Keep the dough away from drafts. If necessary, use a slightly preheated oven.
Bake the cheesecakes for 15-17 minutes at 180-190°C. Check your oven, cooking times may vary.
