In the meantime, do the dough. Mix warm milk with 1 teaspoon of sugar, yeast and 4 tablespoons of flour. Cover the dough with a towel and leave to rise for 10-15 minutes.
Add the remaining sugar, flour, yolks, salt, alcohol and vanilla sugar to the dough. Knead the dough, gradually adding melted butter.
Place the dough in a bowl, cover with a towel and leave to rise for 60–90 minutes. During this time, it should double.
Throw the cooled poppy on a sieve lined with cloth, squeeze well. Pass through a meat grinder with a fine grid twice or chop with a blender.
Chop the walnuts. Add all the filling ingredients except the proteins to the poppy seeds. Whisk them in a separate bowl with a mixer until stiff, then combine with the filling.
You can add candied fruits or other dried fruits and nuts to the filling.
Pound the dough that has come up and divide into three equal parts. Roll each piece into a rectangle about 3 mm thick. Apply the filling evenly onto the dough, 2 cm away from each edge.
Wrap the paper so that the rolls are completely covered by it. There should be a 1 cm gap between the paper and the dough.
Preheat oven to 190 degrees. Transfer the paper rolls to a baking sheet and bake for 40 minutes until golden brown, then remove from the oven and cool.
