Spanish seafood soup

Spicy tomato base, garlic, wine, white fish, shrimp and squid - this aromatic Spanish seafood soup will satisfy any gourmet taste.

Ingredients
- Saffron 1-2 pinches
- Fish broth 1½ l
- Onion 1 piece
- Garlic 3 cloves
- Chili pepper 1 piece
- Tomatoes 650 g
- Fillet of white fish 400 g
- Squid 180 g
- Shrimps 250 g
- Olive oil 2 tbsp spoons
- Smoked paprika 1 tsp spoon
- White wine 125 ml
- Lemon juice 1 tbsp spoon
- Greens to taste
Cooking method
Soak the saffron in the broth for 10 minutes.
Cut the onion in half and chop finely. Chop the garlic finely. Remove the seeds from the chili and chop finely. Cut the tomatoes into large, equal slices.
Cut the fish fillet into 3 cm pieces, squid 2 cm pieces. Peel the shrimp.
Heat olive oil in a large saucepan. Saute the onions, stirring occasionally, for 5 minutes, or until soft and translucent.
Add garlic, chili and paprika. Cook for 1 minute or until aroma is strong.
Pour in wine and cook, stirring occasionally, over medium heat for 2-3 minutes. The liquid should evaporate.
Add saffron broth and tomatoes. Bring to a boil, then reduce heat to low and continue simmering for 5 minutes.
Add fish, shrimp and squid to the broth. Cook for about 5 minutes, or until seafood is cooked through.
Season the dish with lemon juice and sprinkle with chopped herbs.
