Thai rice soup with shrimps

Thai rice soup called Khao Tom is traditionally served for breakfast. Jasmine rice, aromatic broth and fried shrimp go together wonderfully.

Ingredients
- Jasmine rice 60-100 g
- Water 200-300 ml
- Shrimps 150 g
- White peppercorns ¼ tsp spoons
- Garlic 3 cloves
- Cilantro 6 sprigs
- Chicken broth 750 ml
- Fish sauce 1 tbsp spoon
- Soy sauce ½ tbsp spoons
- Greens to taste
Cooking method

Place the rice in a saucepan and cover with water. Bring to a simmer over high heat, then reduce and cook, covered, for about 8 minutes. The rice should be half cooked.
How to cook rice for perfect rice
Peel the shrimp and cut into small pieces.
Grind white pepper until finely ground, add garlic and cilantro and grind again.
Add half of the spice mixture to the shrimp and mix well.
In a skillet, heat the oil over medium heat and saute the shrimp until golden brown. Set aside.
Pour broth into a large saucepan and bring to a boil. Add the remaining half of the spice mixture. Simmer for one minute.
Pour in fish and soy sauce. Salt if necessary. Continue cooking for a couple more minutes.
Place the rice and shrimp in the broth. Bring the soup to a boil and turn off the heat immediately.
