Shrimp and crab bisque

Bisque is a French creamy seafood soup. It has the most delicate taste and pleasant aroma. This variation is prepared with tomato paste and wine.

Ingredients
- Green onions 3-5 stalks
- Celery stalk 1 piece
- 3 tbsp butter spoons
- Wheat flour 3 tbsp. spoons
- Milk 600 ml
- Ground black pepper ½ tsp spoons
- Tomato paste 1 tbsp spoon
- Heavy cream 240 ml
- Crab meat 230 g
- Shrimps 230 g
- Sherry (fortified white wine) 2 tbsp. spoons
- Parsley to taste
Cooking method
Chop green onions and celery.
Melt butter in a large saucepan over medium to low heat. Then fry the onion and celery on it, stirring occasionally, until soft.
Add flour, stir well and continue cooking for a couple of minutes.
Heat the milk in another saucepan over medium-high heat. Then slowly pour it over the fried vegetables, stirring constantly.
Continue to cook, stirring occasionally, until thickened.
Season with black pepper, add tomato paste and cream. Purée the broth with a blender.
Cut the crab meat into small pieces.
Add shrimp, crab meat and sherry to the broth. Bring to a boil and remove from heat. Garnish with parsley when serving.
