Try the original mashed potatoes with pesto. Add some basil, nuts, and parmesan to turn a regular side dish into a gourmet meal.
Cut the peeled potatoes into medium-sized pieces. Boil until tender, about 15 minutes.
Meanwhile, grind the grated Parmesan, chopped garlic, pine nuts and basil in a blender. Add olive oil, salt, pepper and beat again.
Pour the milk into a saucepan, add the butter and simmer over low heat to dissolve the butter completely.
When the potatoes are cooked, drain all the liquid from the pan and pour in the milk and butter, add a little salt and pepper.
Crush the mashed potatoes, then combine with the pesto sauce.
You don't have to use all the sauce, add it to your liking.
