Franzbrötchen - German cinnamon rolls

Franzbrötchen are mouth-watering buns with aromatic cinnamon, soft dough and crispy crust. They are very popular in Hamburg.

Ingredients
- Butter 50 g
- Milk 120 ml
- Dry yeast 1½ tsp spoons
- Sugar 2 tbsp. spoons
- Egg 1 piece
- Vanilla extract 1 tsp spoon
- Salt 1 pinch
- Flour 280 g
- Butter 70 g
- Ground cinnamon 1½ tbsp spoons
- Sugar 100 g
- Egg 1 piece
Cooking method
Melt the butter in warm milk, add yeast and sugar, mix thoroughly.
Add egg, vanilla extract and salt, whisk until smooth.
Gradually add flour to liquid ingredients, knead soft and slightly sticky dough.
Roll it into a ball, place in a deep bowl, cover with a towel and leave in a warm place for an hour.
Whisk the softened butter with cinnamon and sugar.
Wrap the dough and roll it into a rectangular layer 4-5 mm thick.
Spread the cinnamon oil evenly over the dough. Roll into a tight roll. Cut into small trapezoidal pieces.
Line a baking sheet with parchment paper. Place the blanks on it.

Use a stick or the handle of a wooden spoon to press down on the center of each piece. Leave in a warm place for 20-30 minutes.
Preheat oven to 175 ° C. Beat the egg with a fork until smooth. Brush the dough with an egg and bake the buns for 15-20 minutes until golden brown.
