Thai Shrimp Fried Rice

This spicy fried rice with tender shrimps, brightly colored carrot pieces, green peas and an omelet will work for everyone.

Ingredients
- Rice 350 g
- Small carrot 1 piece
- Garlic 2-3 cloves
- Green onions to taste
- Eggs 3 pieces
- Salt to taste
- Vegetable oil 2 tbsp. spoons
- Sesame oil 2 tbsp spoons
- Peeled shrimps 450 g
- Frozen green peas 100 g
- Frozen or canned corn 60 g
- Ground ginger ½ tsp spoons
- Soy sauce 3-4 tbsp. spoons
- Ground black pepper to taste

Boil the rice until tender and cool completely.
How to cook rice for perfect
Cut the carrots into small cubes. Pass the garlic through a press. Chop the green onion. Beat eggs with a fork and a pinch of salt.
Heat both types of oil in a skillet. Fry the shrimp over high heat for 3-4 minutes. Transfer them to a plate.
Add carrots, peas and corn to the same skillet. Fry for 2 minutes over high heat.
Add garlic and ginger, cook for 1 minute. Slide vegetables to the edge of the skillet.
Pour into the center of the egg and fry for 2-3 minutes, stirring and crushing the omelet with a spatula.
Add rice, shrimp, green onions, soy sauce, salt and pepper to taste. Stir, cook everything together for another 2-3 minutes.
