Cuban style baked pork

Cuban-style baked pork is marinated with orange, lime, garlic, cilantro and oregano for 24 hours for a rich flavor.

Ingredients
- Garlic 11 cloves
- Pork shoulder on the bone 1 800 g
- Oranges 6-8 pieces
- Limes 3-4 pieces
- Cilantro 5-7 branches
- Oregano 2-3 sprigs
- Olive oil 60 ml
- Cumin 2 tsp spoons
- Salt 1 tsp spoon
- Ground black pepper 1 tsp spoon
- Water 250-350 ml
Cooking method
Cut four garlic cloves into small pieces. Pass the rest through the press.
Make small holes in the meat with the tip of a knife and insert the garlic pieces into them.
Remove the zest from one orange and one lime. Squeeze the juice out of the fruit. You need 360 ml of orange juice and 120 ml of lime juice.
Chop the cilantro and oregano. Combine with juices, zest, butter, caraway seeds, salt and pepper.

Place the pork in a bag, add half of the marinade and shake well to coat evenly.
The most convenient way is to use bags with a fastener.
Refrigerate the meat for 24 hours. Remove and shake the bag periodically. Leave the remaining marinade in the refrigerator as well.
Remove the pork and marinade from the refrigerator 2 hours before baking.

Heat the skillet, which can also be used in the oven, over medium-high heat. Fry the meat until lightly browned, about 2-3 minutes on each side.
If you don't have the right utensils, simply transfer the pork to a baking dish.
Remove skillet from heat and leave for 15-20 minutes. Then add the remaining marinade and water. Cover with a lid or foil.

Place in an oven preheated to 150 ° C for 2 hours. Remove the foil and bake the meat for another 2-3 hours, until it becomes very tender and begins to separate easily from the bone.
Make sure that at least 2 centimeters of liquid remains at the bottom all the time, add water if necessary.
Remove pork from oven, remove bone and excess fat. Then grind the meat directly in the pan and stir with the sauce in which it was cooked.
