Universal tomato sauce for the winter

This tomato sauce, prepared for the winter, will be an excellent addition to pasta, soups, meat and vegetable dishes. And pizza will be especially tasty with it.

Ingredients
- Tomatoes 3,500 g
- Salt 2 tbsp. spoons
- Vegetable oil 100 ml
- Garlic 7-8 cloves
- Sugar 2 tbsp. spoons
- Dried oregano 1 tbsp spoon
- Dried basil 2 tbsp spoons

Cut the tomatoes into large pieces. Add a tablespoon of salt, stir and let sit for 30 minutes. Then drain off the juice that has emerged.
You can skip this step, but then the tomatoes will boil for at least an hour longer.

Pass the tomatoes through a juicer.
Tomatoes can be minced using a meat grinder. But then the resulting mass must be carefully rubbed through a sieve so that there are no bones and skin left.

Heat oil in a saucepan over medium heat. Fry whole garlic cloves for 2-3 minutes, then transfer to a plate.
You no longer need garlic.
Pour the tomato juice into a saucepan with oil. Bring to a boil and, stirring occasionally, simmer over low heat for about an hour or a little longer to thicken the juice.
Add salt, sugar, oregano and basil. Boil for another 5 minutes.

Pour the sauce into sterilized jars and close the lids. Turn over, cool under a blanket or blanket, and then store in a cool place.
