Try this simple but delicious stew with zucchini and potatoes. The combination of familiar vegetables and mushrooms becomes even tastier with spices.
Peel potatoes and cut into slices. Heat oil in a skillet over medium heat.
Fry the potatoes, covered, for 10-15 minutes, stirring occasionally, until they are browned.
Chop the onion, peppers, courgette and mushrooms into approximately the same or slightly smaller pieces.
Put everything in the skillet, season with spices and stir. Cook for about 10 more minutes, until all vegetables are tender.
If the vegetables stick to the bottom, add some water.
