Plum jam with agar-agar

Fragrant, sweet and very thick plum jam will be an ideal filling for pies and other pastries or just a delicious dessert for tea.

Ingredients
- Plums 2 500 g
- Sugar 1 500 g + 2 tbsp. spoons
- Citric acid ΒΌ h. spoons
- Agar-agar 10 g
Cooking method
Remove the seeds from the plums. Cover the fruit pulp with sugar, stir gently and leave at room temperature for 4-5 hours or overnight.
Put on medium heat and, stirring occasionally, heat for 5 minutes to dissolve the sugar. Remove from heat and blend with a hand blender.

Return to heat, add citric acid, bring to a boil and simmer over low heat for 5-7 minutes.
Skim off any foam that forms on the surface and stir occasionally.
Stir the agar-agar with 2 tablespoons of sugar, add to the pan, stir and cook for another 7-10 minutes.

Pour hot jam into sterilized jars and close the lids. Store cool after cooling.
