Eggplant peacock tail

“Peacock's tail” made from baked eggplants and fresh vegetables with a spicy garlic sauce is simple to prepare, but it will look effective on the table.

Ingredients
- Eggplant 1 piece
- Salt to taste
- Vegetable oil 2 tbsp. spoons
- Cucumber 1 piece
- Small tomatoes 2 pieces
- Pitted olives 6-8 pieces
- Garlic 2 cloves
- Mayonnaise 2 tbsp spoons
- Parsley 2-3 sprigs
Cooking method
Preheat oven to 180 ° C. Line a baking sheet with parchment paper.
Cut the eggplants into slices diagonally, sprinkle with salt and sprinkle with vegetable oil.
Place the pieces on a baking sheet and bake until tender, 20-25 minutes.
Cut the cucumber and tomatoes into slices. Divide the olives in half lengthwise.
Peel the garlic, pass through a press and mix with mayonnaise.
Cool the eggplants a little and put on a platter in the form of a peacock's tail.
Brush each slice with mayonnaise. Place the tomato and cucumber slices on top.
Place the halves of the olives on top of the cucumbers. Garnish with parsley leaves.
