Jamie Oliver's recipe is perfect for a festive table. Basil and wine vinegar will reveal the taste of potatoes with chicken in a special way.
Wash the young potatoes, put in a saucepan, cover with water and cook in salted water for 20 minutes.
At this time, rinse the chicken thighs, remove the bones and cut into medium pieces.
Preheat a frying pan and put the chicken skin side down on it. This will remove excess fat from the meat, and you will not need to add oil for frying. Season with salt and pepper. Fry the chicken for 10 minutes, stirring occasionally.
Wash the tomatoes and make a cruciform cut at the top of each. Boil water in a saucepan and add the tomatoes. Leave for 45 seconds and then transfer them to a container of cold water. After a minute and a half, take out the tomatoes and peel them off.
Cut the tomatoes into medium slices. Break the finished potatoes or simply crush them with a wide knife.
Prepare a dressing. Grind most of the basil with a blender until smooth, add olive oil, wine vinegar, pepper and beat again. This makes a sauce similar to pesto.
Add potatoes, tomatoes, dressing and fresh basil to the chicken. Stir and place in an oven preheated to 200 ° C for 35-40 minutes.
Serve with lettuce and lemon juice.
