Potato salad with tuna

Tuna potato salad is a popular dish in Andalusia and especially in Cadiz. In it, simple ingredients harmoniously complement each other.

Ingredients
- Young potatoes 1 350 g
- Sea salt 1½ tbsp spoons
- Eggs 2 pieces
- Onion 2 pieces
- Parsley 5-7 sprigs
- Sherry vinegar 4 tbsp spoons
- Olive oil to taste
- Canned tuna 350 g

Put the unpeeled potatoes in a saucepan, cover with water and cook over high heat, after boiling, add a tablespoon of salt.

After about 25 minutes, when the potatoes are tender, remove the pan from the heat and let sit for 30 minutes.
Remove the potatoes from the water, transfer to a sieve and wait another 20 minutes.

Boil the eggs hard-boiled for about 10 minutes and cool.

Peel the potatoes and cut into large pieces.

Chop eggs, onions, parsley and add to the potatoes along with half a spoonful of salt, vinegar and oil.
1 to 2 quarters of the egg may be left to serve.
Drain the tuna and place the fish in a salad bowl with the rest of the ingredients. Stir.
