These delicious eggplant stuffed with meat will disappear from the table in minutes. Add sweet and sour sauce to them for even better taste.
Cut the eggplant into slices 5–7 mm thick. Cut each circle along the middle almost to the end.
Chop the green onion finely. Peel and grate the ginger.
Thoroughly stir the minced meat with green onions, ginger, soy sauce and salt.
Put 1 tablespoon of minced meat inside each piece of eggplant, evenly distributing it.
Beat the egg with a whisk with cold water, add flour and stir the batter until smooth.
Heat vegetable oil in a deep skillet. Dip each workpiece into batter.
Fry for 5-6 minutes until golden brown. Place the eggplant on a paper towel to remove excess oil.
