A simple pork soup with pepper, zucchini and grilled eggplant and soy sauce will amaze you with its bright and rich taste.
Pour cold water over the pork. Bring to a boil, remove the foam and simmer over low heat for about an hour or longer.
Place the meat on a plate, cool slightly and cut into portions.
Cut the pepper, zucchini and eggplant into medium slices. Grill in a skillet for a few minutes on each side.
Return the pork to the pot along with the coarsely chopped tomatoes and grilled vegetables. Add salt, pepper, basil, oregano, and soy sauce. Cook everything together for another 10 minutes.
Sprinkle with herbs before serving.
