Gooseberry and strawberry jam

Gooseberry and strawberry jam turns out to be unusually tasty. It will be the perfect complement to hot tea and baked goods.
Rinse and sort the berries so that no spoiled ones remain. Remove the tails and stems from the gooseberry, and the stem from the strawberry. Squeeze two tablespoons of lemon juice.
Place the strawberries in a saucepan and mash gently. Add gooseberries, lemon juice and water. Put on low heat and simmer for about 10 minutes after boiling to soften the berries. Stir frequently.
Cover the berries with sugar and, while stirring, cook over low heat for about 5-8 minutes to dissolve the crystals.
Raise the heat slightly and continue cooking for another 10-12 minutes. Stir and skim the foam off the surface.
To make sure the jam is done, drip some onto a cold plate. After a minute, gently press on the drop: if its surface is slightly wrinkled, the jam is ready. If the drop spreads, cook the jam for another 2-3 minutes.
While checking the doneness, remove the jam from the stove.
Pour the jam into a sterilized jar and roll up the lid. Turn over, wrap with a blanket and leave to cool completely.
