This quick cod liver salad with cucumbers and boiled quail eggs successfully complements the greens, giving the dish freshness and lightness.
Boil quail eggs hard-boiled for 5 minutes. Cool, peel and cut into halves or quarters.
How and how much to cook quail eggs
Cut the cucumbers into small pieces. Pick up the salad with your hands. Chop the green onion.
Drain the canned food and mash the cod liver with a fork to make medium-sized pieces.
Place the lettuce leaves on a plate. Place the liver, cucumbers and eggs on top. Sprinkle with onion, pepper and salt, sprinkle with olive oil and serve immediately.
Better to use freshly ground black pepper.
