Delicious raspberry and cream cheese pie

- Flour 250 g
- Powdered sugar 50 g
- Butter 150 g
- Egg 3 pieces
- Mascarpone 250 g
- Condensed milk 250 g
- Raspberries 300-350 g

Combine the sifted flour with powdered sugar. Grate chilled butter there and rub everything quickly to make small crumbs.
Sprinkle the butter lightly with flour to prevent it from sticking to the grater.
Add 1 egg to the mass and knead the dough. But don't knead for too long to clog it.
Wrap the dough in plastic wrap and refrigerate for 1 hour.
Then roll out the dough into a thin layer and place in a baking dish, forming the sides. Make a few pricks on the dough with a fork.
Put parchment on top of the piece and sprinkle dry peas or beans. The weight is needed so that the base for the cake retains its shape and does not swell.
Bake for about 15 minutes at 180 ° C. Then remove the parchment with the legumes and place in the oven for about 10 minutes more.
Beat the cheese lightly with a mixer. Add condensed milk to it first, and then the remaining eggs in turn. Whisk each time to get a soft, homogeneous mass.
Place the cheese mass on a pie base and flatten. Bake for 17-20 minutes, then cool completely.
Place raspberries on top of the pie. Serve the cake immediately or chill slightly in the refrigerator.
