These light cucumber rolls take just 15 minutes to cook. The delicate combination of fish and avocado is perfectly complemented by citrus and mustard notes.
With a fine grater, remove the zest from the lemon and squeeze 1 teaspoon of juice out of it.
Drain the tuna and mash it with a fork. Combine with zest, lemon juice, mayonnaise, mustard, salt and pepper.
Peel and chop the avocado into small pieces. Slice the cucumber into long thin strips.
For each cucumber slice, place 2 teaspoons of tuna and 2-3 avocado slices. Roll into rolls.
Combine mayonnaise and sriracha if desired and serve with the appetizer sauce.
