This light celery root salad turns out to be very unusual and delicious thanks to the addition of blue cheese and a dressing with mustard and shallots.
Chop the shallots, mix with vinegar, mustard, add a pinch of salt and pepper. Leave it on for 10 minutes.
Add olive oil and chopped cheese to the shallot, stir again.
Chop the nuts into not too small pieces with a knife.
Cut the celery root and apples into strips. Place in a bowl with spinach leaves and nuts.
Apples can be drizzled lightly with lemon juice to keep them from darkening.
Drizzle with dressing, salt, pepper and stir just before serving.
