Deep-fried chicken wings

Thanks to the spices, deep-fried wings acquire a pleasant aroma, and frying in a large amount of oil makes them crispy and ruddy.

Ingredients
- Chicken wings 900 g
- Salt to taste
- Ground black pepper to taste
- Flour 250 g
- Dried garlic 1 tsp a spoon
- Dry mustard ¹⁄₂ tsp spoons
- Ground cayenne pepper ¹⁄₄ – ¹⁄₂ tsp. spoons
- Vegetable oil 700 - 1,000 ml
Cooking method
Cut off the tips from the wings. Chop the chicken in half at the joint.
Place on a baking sheet with wire rack. Sprinkle with salt and pepper, turn over and sprinkle on the other side.
Place the wings in the refrigerator for 1 hour.
Combine flour, garlic, mustard, cayenne and black pepper and salt.
Dip the chicken in the resulting breading.

Heat oil over medium heat in a saucepan. There should be enough of it so that the wings can float.
Ideally, the oil should be brought to a temperature of 180–190 ° C. If you don't have a thermometer, place a small piece of bread in the pan - the butter should sizzle around it.

Spread 5-6 wings in hot oil. Fry for 9-11 minutes, until golden brown.
For even crispier crust and fried meat, keep the chicken on the fire for about 15 minutes.
Transfer the chicken to a paper towel to remove excess fat.
