Yoghurt cake with strawberry icing

Ingredients
- Butter 110 g + 1 tsp spoon for smearing
- Sugar 300 g
- Eggs 3 pieces
- Greek yogurt 160 g
- Flour 225 g
- Soda ¼ tsp spoons
- Fresh or frozen strawberries 3 pieces
- Butter 110 g
- Fine crystalline sugar 180 g
- Vanilla extract ½ tsp spoons
- Strawberry to taste
Cooking method
Preheat oven to 175 ° C. Grease a baking dish with butter.
Beat the softened butter and sugar with a mixer until smooth and fluffy.
While whisking, add the eggs one by one to the butter.
When the mixture is smooth, add the Greek yogurt to it and mix thoroughly.
Sift the flour along with the baking soda. Pour the dry mixture into the yoghurt mix in portions.
Mix the dough well and pour into the prepared mold. Bake the cake for 50-60 minutes in a preheated oven.
Cool the finished cake slightly, remove from the mold and transfer to the wire rack until completely cooled.
For the icing, chop the strawberries in puree and rub through a sieve.
Using a mixer, beat the butter, sugar, strawberries and vanilla extract until smooth and fluffy.
Cover the cooled muffin with icing. Garnish with strawberries if desired.
