Shah pilaf with beef

The peculiarity of this dish, popular in Central Asia, is baking rice with meat in pita bread. Shah pilaf turns out to be especially tasty and appetizing.

Ingredients
- Rice 400 g
- Salt to taste
- Vegetable oil 100 ml
- Onion 1 piece
- Beef 350 g
- Carrots 1 piece
- Dried apricots to taste
- Raisins to taste
- Water 70-100 ml
- Ground black pepper to taste
- Thin lavash 2-3 pieces
- Butter 100 g
Cooking method
Boil rice in lightly salted water until half cooked. This will take about 10 minutes after boiling. Cool it down.
Heat vegetable oil in a frying pan and fry chopped onion until golden brown.
Add small pieces of beef to the onion and cook for another 15 minutes.
Grate the carrots on a coarse grater. Chop dried apricots. Add everything along with the raisins to the meat, cover with water, salt, pepper and simmer under the lid for 5 minutes.
Cut the pita bread into wide strips of such length that when placed in the mold, about half remains outside.
Melt the butter and spread it over a baking dish.
Put the pita bread in a mold so that the ribbons diverge to the sides from the center like rays, overlap the entire bottom with the walls and hang out.
Layer rice and meat with vegetables on pita bread. The top layer should be rice.
Pour butter over the filling and cover with pita bread so that it is not visible. Grease the top with the remaining oil. Close the mold with a lid.
Bake for 50-60 minutes at 170 ° C.
