Son-in-law fried eggs - an unusual Thai snack

Ingredients
- Vegetable oil 300-400 ml
- Boiled eggs 8 pieces
- Onions 1 piece
- Palm sugar 70 g
- Fish sauce 60 ml
- Tamarind paste 2 tbsp spoons
- Fresh chili to taste
Cooking method

In a skillet or wok, heat the oil over medium heat. Place the peeled eggs in there and fry for about 3 minutes until golden brown.
The butter should completely cover the eggs.
Chop the onion and fry with a few tablespoons of oil for 6-8 minutes.

In a saucepan, combine 1 tablespoon of fried onion oil with grated sugar, fish sauce and tamarind paste.
Instead of palm sugar, you can use 50 g of brown sugar, and instead of tamarind paste, you can use sweet and sour sauce.
Bring the sauce to a boil, stirring constantly. Cook until the sugar is completely dissolved and the sauce thickens like syrup.
Cut the eggs into halves, pour over the sauce, sprinkle with chopped chili seeds and fried onions.
