Boiled eggs in tomato sauce are a great side dish or an appetizing independent dish with bright notes of garlic, ginger and spices.
Cut the onion into quarters or smaller.
Heat oil in a skillet over medium heat. Fry the onion for 6-8 minutes.
Add chopped garlic, ginger, cumin, cardamom, coriander, turmeric and mix well.
A teaspoon of ginger is enough.
Add broth, tomato sauce and chopped tomatoes. Simmer everything together until the sauce thickens. Season with salt and pepper.
Place the peeled eggs in the sauce and simmer for a few minutes to warm up.
Sprinkle with chopped herbs before serving.
