Misch-mash - Bulgarian omelet with vegetables

Try mish-mash, a delicious Bulgarian dish. Juicy tomatoes and peppers, fluffy beaten eggs and feta perfectly complement the entire palette of taste.

Ingredients
- Tomatoes 3 pieces
- Bell peppers 3 pieces
- Onion 1 piece
- Garlic 2 cloves
- Vegetable oil 2 tbsp. spoons
- Feta 400 g
- Eggs 6 pieces
- Salt to taste
- Ground black pepper to taste
- Green onions or parsley to taste
Cooking method
Pour boiling water over the tomatoes for a few seconds and peel them off. Then coarsely chop the fruits and remove the seeds from them.
Cut the pepper and onion into small pieces, chop the garlic.
Heat oil in a skillet over medium heat. Fry the onion and garlic for 2 minutes.
Pour bell peppers into the pan, stir and cook covered for 5 minutes.
Add the tomatoes and sauté, covered, for another 5-7 minutes.
Mash the cheese. Beat eggs with salt and pepper.
Add cheese to the pan with vegetables, mix and cover with eggs. Cook for a few minutes, stirring occasionally.
Sprinkle the omelet with chopped herbs, leave for a minute under the lid, and then serve.
